Southern Pecan Chicken Salad

Makes 12 servings

Ingredients:
8 cups chopped cooked chicken (2 rotisserie chickens from the grocery store)
2 cups halved red seedless grapes
1 1/4 cups toasted chopped pecans
1/2 cup chopped green onion
10 slices bacon, cooked and crumbled
1 1/2 cups mayonnaise
1 cup sour cream
2 tablespoons Dijon mustard
1 tablespoon chopped fresh thyme
1 1/4 teaspoons salt
1 teaspoon ground black pepper

To toast pecans: place them in a cast iron skillet on the stove and watch them carefully, as you don't want them to burn.

Combine chicken, grapes, pecans, green onion, and bacon in a large bowl. Mix mayonnaise, sour cream, mustard, thyme, salt and pepper together in a small bowl. Combine mayonnaise mixture with chicken mixture. Cover and refrigerate until ready serve. Also great served on croissants!

I am going to be joining Designs by Gollum for Foodie Friday.. do drop in!

Marlis, Oh, that sounds soooo good. The bacon and sour cream gives it a whole new twist. Yum.
What time is lunch tomorrow? I'll bring the iced tea or wine to go with the chicken salad and croissant.
Hugs,
Babs

Is there anything better than chicken salad? I keep it made all summer long. I am going to try this recipe the next time I make it.

Hey Marlis!!! So you put grapes in yours too, huh? Glad to know I'm not alone! :) I took pics of my pergola all dressed up this afternoon (with the 2 hour lull in the rain), and I REALLY hope you'll stop by and take a peak! :)

How cool & refreshing this looks, Marlis! I love chicken salad for summer & in fact, served a very different version to my quilt group recently. I just posted the recipe.

One of my friends always adds tarragon to her chicken salad. I've tried it twice & I kinda like the little flavor change it gives. Just a thought for the next time you make yours.

fondly,
Rett

wow..this sounds wonderful. I put pecans and grapes but never thought to add bacon. Bacon is good in EVERYthing. :))

What a delicious looking recipe. Gonna keep this for sure. It would be good anytime, but especially for a nice cool summer evening meal, when it is too hot to cook!!

Sounds delicious. I'm a big fan of chicken salad with grapes and pecans. It's a wonderful recipe for a ladies luncheon or just kicking back at home alone with the little Mr.
