Margarita Pork Kabobs



Margarita Pork Kabobs

1 pound boneless pork loin, cubed
1 cup bottled Margarita mix (non-alcoholic)
1 teaspoon ground coriander
1 clove garlic, minced
2 tablespoons butter, softened
2 teaspoons freshly squeezed lime juice
1 tablespoon parsley, minced
1 large green pepper, cubed
1 large red pepper, cubed
2 ears corn, cut into 8 pieces
small white onions


Combine margarita mix, coriander and garlic. Place cubed pork into heavy plastic bag and add marinade. Marinate for at least 30 minutes - 2 hours is better.

Blend butter, lime juice and parsley and set aside. 

After pork has marinated, layer pork, peppers, onions and corn on skewers*. Baste with butter mixture while on the grill. Grill for about 15-20 minutes. turning frequently.

Service with rice and a green salad. 

*If using bamboo skewers, soak first for 20-30 minutes to prevent them from catching fire on the grill.

This recipe has been in our family now for 15+ years. I saw it first in a magazine. It's so perfect for summer dining, especially when new fresh corn is available. Also one of our very favorite entertaining menus!
